Cyber Food Truck – Avocado Toast

My Cyber Food Truck has rolled in my blog with another simple but great recipe – Avocado Toast!

AvocadoThere are so many recipes and variations of avocado toast.  Let me know your version.  You can have this toast as a breakfast, snack or light meal.

Some tips for a great result are

  • choose a ripe avocado;
  • choose a hardy bread;
  • remember to add enough salt;
  • add a drizzle of extra-virgin olive oil;
  • add an fried egg on top for more protein!
1/2 Hass avocado
 1 pinch of salt
 1 dash of pepper (optional)
 1 teaspoon of extra-virgin olive oil
 1 slice of your favorite bread
 2 strips of bacon
 1 egg
 1 slice of tomato (optional)
  1. Cut avocado in half and remove pit.
  2. Scoop out avocado into a bowl and mash with a fork.
  3. Add salt and pepper (IC folks can omit the pepper).
  4. Toast bread.
  5. Spread avocado mixture on toast.
  6. Drizzle extra-virgin olive oil.
  7. Fry or microwave strips of bacon (vegetarians can omit bacon).
  8. Fry on egg and place on top of avocado mixture.
  9. Slice a ripe tomato (IC folks can omit the tomato).

According to registered dietitian with the Academy of Nutrition and Dietetics, Torey Armul states that “avocados are a good source of fiber and various vitamins and minerals, like vitamin C, vitamin K, folate, and potassium.”  He adds that avocados best feature is “…their heart-healthy monounsaturated fats…[that] have cardio-protective properties and support healthy cholesterol levels.” []
