My Cyber Food Truck has rolled in my blog with another simple but great recipe – Avocado Toast!
There are so many recipes and variations of avocado toast. Let me know your version. You can have this toast as a breakfast, snack or light meal.
Some tips for a great result are
- choose a ripe avocado;
- choose a hardy bread;
- remember to add enough salt;
- add a drizzle of extra-virgin olive oil;
- add an fried egg on top for more protein!
INGREDIENTS 1/2 Hass avocado 1 pinch of salt 1 dash of pepper (optional) 1 teaspoon of extra-virgin olive oil 1 slice of your favorite bread 2 strips of bacon 1 egg 1 slice of tomato (optional)
DIRECTIONS

Cut avocado in half and remove pit.

Scoop out avocado into a bowl and mash with a fork.

Add salt and pepper (IC folks can omit the pepper).

Toast bread.

Spread avocado mixture on toast.

Drizzle extra-virgin olive oil.

Fry or microwave strips of bacon (vegetarians can omit bacon).

Fry on egg and place on top of avocado mixture.

Slice a ripe tomato (IC folks can omit the tomato).
According to registered dietitian with the Academy of Nutrition and Dietetics, Torey Armul states that “avocados are a good source of fiber and various vitamins and minerals, like vitamin C, vitamin K, folate, and potassium.” He adds that avocados best feature is “…their heart-healthy monounsaturated fats…[that] have cardio-protective properties and support healthy cholesterol levels.” [https://www.womenshealthmag.com]
